In the last few years, the popularity of the Instant Pot has hit new highs, and it is one of the best- selling cooking appliances on the market.
Whether you’re an Instant Pot beginner or a seasoned pro, we’ve compiled a list of over 20 gluten-free Instant Pot recipes for you to try.
Note: Always confirm gluten-free status of all ingredients. The safest oat products are those that have been certified gluten-free. While products labeled gluten-free should comply with the FDA definition of containing no more than 20 ppm of gluten, this is not third-party verified. GFCO’s standard for gluten-free is 10 ppm of gluten or less.
Apple Cinnamon Oat Porridge. When you´re in the mood for a cozy, healthy fall breakfast, there is nothing like some cinnamon-y oats to keep you warm.
Brown Butter Steel-Cut Oatmeal. Not a fan of cinnamon? We´ve got you covered; try this brown sugar oatmeal instead.
Spinach and Feta Frittata. Equally at home for breakfast, brunch, or a weeknight dinner, this hearty frittata is packed with veggies and savory cheese.
Fast and Easy Shakshuka. Take a trip to Northern Africa and the Middle East with this easy to make shakshuka. This also makes a great “breakfast for dinner” dish.
Fluffy Egg Bites. An American favorite! Make a batch to eat during the week; they reheat nicely in a microwave. If you have a blender, the results are spectacular, but no one will complain if you just use a whisk.
Chicken Tikka Masala. Consider this anything but boring Indian style chicken recipe that’s easy enough for weeknights; pair with rice and you have the perfect dinner combo.
Lemongrass-Ginger Kabocha Squash Soup. Warm yourself up with pumpkins and soup! What better way than with this perfect mash-up between a sweet potato and a pumpkin with a velvety texture and sweet, nutty notes. (Use gluten-free soy sauce or tamari.)
Creamy Veggie Risotto. This creamy risotto feels just right on chilly nights. It´s loaded with lots of veggies, and the best part is, no stirring required – just put the instant pot on sauté for a couple of minutes!
Smoky Chipotle Quinoa, Black Beans, and Corn. Crunchy quinoa, savory beans, and sweet corn cooked in a delicious smoky chipotle sauce. Make it as a side or as a main dish.
Road Map: Bone-In Chicken Breasts. Nothing like a tender piece of chicken to finish the day; add some cauliflower rice to it and you have a complete gluten-free healthy meal! (If you use the beer option, use only beer made from gluten-free ingredients. Do not use “gluten-removed” beer.)
Cedar Plank Salmon. This omega 3 packed meal has a mustard-honey glaze, and is infused with an amazing cedar aroma.
Instant Vegetable Medley. Steamed vegetables are one of the easiest and healthiest things you can make in the Instant Pot; for a different flavor try sautéing them in garlic and olive oil just before serving.
Spicy Lentils. This Indian classic is to die for! Serve this over rice or quinoa for a complete meal that your family will love! (Due to risk of cross-contact with gluten, use of certified or gluten-free labeled lentils is recommended. If you use asofoetida make sure it is gluten-free)
Valencia-Style Paella. We may not be able to vacation in Spain – but we can at least cook like it.
Herbed Polenta. The gentle heat of cooking on low pressure means you’ll get smooth, creamy polenta that won’t stick to the bottom of the pot. And the herbs give it a delicious flavor; have it as a side or main dish.
Maple Spice Rubbed Ribs. This is a must! Do we need to say more?
Brown Rice-Stuffed Cabbage Rolls with Pine Nuts and Currants. Introducing a new way to eat cabbage! This vegetarian stuffed cabbage is an amazing and delicious way to eat your veggies and a perfect Sunday night dinner for all!
Beef Bourguignon. Did someone say France? Nothing like this classic French dish to make you say oui-oui I want more!
Tuscan Minestrone Soup. Take a trip to Italy with this cozy and nutritious gluten-free minestrone soup, loved by both kids and adults. You can´t go wrong with this one. (Substitute in gluten-free pasta.)
Dulce De Leche. Dulce de leche is extremely popular in South America, and we can see why! With just two ingredients and minimal effort, you can have this sweet delight ready when you crave something sweet.
Vanilla-Scented Rice Pudding. A classic comfort food, this subtly sweetened, fragrant vanilla pudding is creamy and rich without being over the top. It´s the perfect dessert.
A Little Extra: Beans
No-Soak Beans in the Instant Pot. Why? Because they don’t get enough credit! These little guys are packed with protein and fiber, and best of all, there is an endless variety of delicious uses for them once they are cooked!
Start with favorites like pintos, black beans, and garbanzos – then branch out to varieties that may be new to you, like cranberry beans and cannellini, to name just a couple.
Once your beans are cooked, here are a few great dishes to create with them:
Vegan meatballs (Use lentils that are certified or labeled gluten-free.)
Healthy Dip. Love white beans? Cook them with some herbs and add a little sour cream, and mash or blend them to make an amazing healthy dip
Toss them into a salad
Refried beans. Make your own version of refried beans and add to your quesadillas or have as a side dish
Mashed beans – just mash them to whatever texture you like best, and they work great as a side dish!
Soup additions. Add them to your favorite vegetable soup for extra protein and flavor
