Cookie Recipes for a Gluten-Free Holiday

Classic Chocolate Chip Cookies
Start with a classic, but make it gluten-free. Use almond flour or a gluten-free flour blend for that perfect chewy texture. Remember, you can never go wrong with chocolate chips! Gluten-Free Chocolate Chip Cookies:
Ingredients:
2 cups almond flour
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup maple syrup
1/4 cup coconut oil, melted
1 egg
1 tsp vanilla extract
1/2 cup chocolate chips
Instructions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together almond flour, coconut flour, baking soda, and salt.
In a separate bowl, mix together maple syrup, melted coconut oil, egg, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until a dough forms.
Fold in the chocolate chips.
Roll the dough into balls (about 1 tbsp each) and place them on the prepared baking sheet.
Flatten each ball slightly with a fork.
Bake for 12-15 minutes, or until golden brown.
Gingerbread Cookies

Instructions:

Linzer Cookies
