Wow! Look who is speaking at the 2021 Teen Summit this year!!

 

Keynote Day 1: Nadine Grzeskowiak,
Gluten-Free RN 

Nadine Grzeskowiak, RN, BSN, CEN is a RN specializing in celiac disease and NCGS. She is an author, celiac nurse researcher, professional speaker and consultant to individuals and families. She developed and teaches “Celiac Disease for Health Care Providers” an 8 to 16-hour course accredited and approved for continuing education hours. Her mission is to educate people globally about NCGS and CD, empowering them to improve their health and quality of life with food. Extra special valuable activities include traveling, reading, climbing mountains, hiking, knitting, preparing and eating meals with family and friends. And walks on the beach too. IG: @GlutenFreeRN 

Keynote Day 2: Erica Dermer,
Celiac and the Beast

Erica is a well-known digestive health expert, blogger and influencer who blogs regularly at Celiac and the Beast. She’s known for her work covering the trade show floor searching for the best gluten-free products and celiac disease research at national trade shows like Natural Products Expo and Gluten-Free Expos across the country, and in her role as a patient advocate for digestive health conferences like Digestive Disease Week, and the American Gastroenterological Association James W. Amy Fothergill,
Amy the Family Chef 

Amy Fothergill studied at Cornell University’s School of Hotel Administration. She never thought her culinary skills would be necessary to manage her family’s special diet but has found her cooking knowledge to come in handy. She experimented with the ingredients and techniques necessary for recreating traditional dishes into equally delicious gluten-free and dairy-free versions. Most people say they can’t tell the difference. Currently she is a speaker, instructor, consultant, and blogger and the author of the gluten-free cookbook, The Warm Kitchen: Gluten-Free Recipes Anyone Can Make and Everyone Will Love. She also has a home-based gluten-free bakery in the San Francisco Bay Area.  IG: @amythefamilychef 

Rayna Katzman,
Everyone’s Got Something

Rayna Katzman is a rising junior at Union College in upstate New York who was diagnosed with celiac disease when she was 13. She is majoring in sociology with a minor in visual arts and plays on her collegiate tennis team. In her free time Rayna loves to take photos, go on hikes, and hang out with her friends and family. Rayna has been involved in celiac disease advocacy since her diagnosis and wrote a book with her mom and twin sister, “Everyone’s Got Something: My First Year with Celiac Disease.” IG: @everyones.got.something 

 

 

Anne Lee, EdD, RDN, LD 

Anne Lee is an Instructor of Nutritional Medicine in the Department of Medicine and the Institute for Human Nutrition at Columbia University and the dietitian for the Celiac Disease Center. She’ll be speaking on fitting in through middle and high school when living gluten-free.

 

 

 

 

Erin Smith,
Gluten Free Globetrotter 

Erin Smith was diagnosed with celiac disease when she was two years old, so she has been eating gluten-free almost her entire life. Erin has a unique perspective of growing up in the gluten-free community. She is passionate about sharing her celiac and gluten-free experiences living with others. Erin started writing her first gluten-free blog Gluten-Free Fun in 2007. In 2011, Erin launched Gluten-Free Globetrotter®️, a website that focuses on gluten-free travel. Erin is a founding organizer of the NYC Celiac Meetup Group, as well as the Santa Cruz (CA) Celiac Support Group. She currently lives in Brooklyn, NYC with her family and always lives 100% gluten-free. IG: @glutenfreeglobetrotter 

Coral Ward,
Gluten-Free with Coral

Coral Ward is an award winning author, creator of @glutenfreewithcoral, and host of the #1 gluten free podcast, Gluten Free You and Me. She provides hope, inspiration, and resources, and through her advocacy, she has created a safe and uplifting community for all gluten free warriors. IG: @glutenfreewithcoral
