Gluten-Free Peach Cobbler
Ingredients:
- 5 – 6 ripe peaches, sliced (about 4 cups)
- 1/4 cup of sugar (plus a little extra for topping)
- 1 tsp lemon juice
- 1/2 tsp cinnamon (optional)
For the topping:
- 3/4 cup gluten-free all-purpose flour (GFCO-Certified Flours: King Arthur, KRUSTEZ, NU Life, Cup 4 Cup, GF Jules)
- 1/4 cup almond flour (or more gluten-free flour if avoiding nuts)
- 1/4 cup of sugar
- 1 tsp baking powder
- Pinch of salt
- 1/4 cup of butter or coconut oil (cold and cut into chunks)
- 1/4 cup milk (or dairy-free milk)
Instructions:
- Preheat oven to 375°F.
- In a mixing bowl, toss peach slices with sugar, lemon juice, and cinnamon. Pour into a greased 8×8 dish.
- In another bowl, mix dry topping ingredients. Cut in the butter/oil until crumbly. Stir in milk until it forms a thick batter.
- Drop spoonsful of topping over the peaches. Sprinkle with a bit of sugar.
- Bake for 30–35 minutes until topping is golden and peaches are bubbly.
- Let cool slightly and enjoy with a scoop of vanilla ice cream (dairy or non-dairy)!
