Gluten-Free Holiday Stuffing

Stuffing is a quintessential holiday dish that many people look forward to each year. This gluten-free version is both delicious and satisfying, ensuring everyone at the table can enjoy a taste of the holidays. 


Ingredients: 

  • 1 loaf gluten-free bread (about 12 slices), cubed 
  • 1/4 cup olive oil or melted butter 
  • 1 medium onion, diced 
  • 2 stalks celery, diced 
  • 2 cloves garlic, minced 
  • 1 cup mushrooms, sliced 
  • 1 tsp dried sage 
  • 1 tsp dried thyme 
  • 1/2 tsp dried rosemary 
  • 1/2 tsp salt 
  • 1/4 tsp black pepper 
  • 2 cups gluten-free chicken or vegetable broth 
  • 1/4 cup fresh parsley, chopped 
  • 1/2 cup dried cranberries (optional) 
  • 1/2 cup chopped nuts, such as pecans or walnuts (optional) 

 

Instructions: 

  1. Prepare Bread Cubes: Preheat your oven to 300°F (150°C). Spread the gluten-free bread cubes on a baking sheet. Toast in the oven for about 15 minutes or until they are dry and slightly golden. Set aside to cool. 
  2. Cook Vegetables: In a large skillet, heat the olive oil or melted butter over medium heat. Add the diced onion and celery, sautéing until they become translucent, about 5 minutes. Stir in the garlic and mushrooms, cooking for an additional 3-4 minutes. 
  3. Season the Mixture: Add the dried sage, thyme, rosemary, salt, and black pepper to the skillet. Stir well to combine and let the spices cook for about a minute to release their flavors. 
  4. Combine with Broth: Pour in the gluten-free chicken or vegetable broth, allowing it to come to a gentle simmer. Remove the mixture from the heat. 
  5. Mix with Bread: In a large mixing bowl, combine the toasted bread cubes with the broth mixture. Add the chopped parsley, dried cranberries, and nuts if using. Mix until the bread is well-coated with the broth and vegetable mixture. 
  6. Bake the Stuffing: Preheat the oven to 350°F (175°C). Transfer the stuffing mixture into a greased baking dish. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown. 
  7. Serve: Let the stuffing cool slightly before serving. Enjoy as a delightful gluten-free side dish that will complement any holiday meal.
