Gluten-free Gazpacho: A Refreshing & Nutritious Soup For Any Time of Year
There’s nothing quite as refreshing as a chilled bowl of gazpacho. This classic Spanish soup is typically made with a combination of fresh vegetables and bread, but for those following a gluten-free diet, the bread can be a problem. Luckily, there’s an easy solution: gluten-free gazpacho!
To make gluten-free gazpacho, simply skip the bread and use your blender to puree together ripe tomatoes, cucumbers, bell peppers, garlic, and onion. Add a splash of olive oil and vinegar, along with some salt and pepper to taste. Chill the soup in the fridge for a few hours to allow the flavors to meld together, and you’re ready to enjoy a refreshing bowl of gluten-free gazpacho. Of course, these days, there are so many gluten-free bread options, so you’ll have to choose which one to try!
Not only is this soup delicious and refreshing, but it’s also packed with nutrients. Tomatoes are a great source of vitamin C, while cucumbers are high in fiber and hydration. Bell peppers add a dose of vitamin A, and garlic and onion are both known for their immune-boosting properties.
