Gluten-free Gazpacho: A Refreshing & Nutritious Soup For Any Time of Year

There’s nothing quite as refreshing as a chilled bowl of gazpacho. This classic Spanish soup is typically made with a combination of fresh vegetables and bread, but for those following a gluten-free diet, the bread can be a problem. Luckily, there’s an easy solution: gluten-free gazpacho!

To make gluten-free gazpacho, simply skip the bread and use your blender to puree together ripe tomatoes, cucumbers, bell peppers, garlic, and onion. Add a splash of olive oil and vinegar, along with some salt and pepper to taste. Chill the soup in the fridge for a few hours to allow the flavors to meld together, and you’re ready to enjoy a refreshing bowl of gluten-free gazpacho. Gluten-Free Gazpacho Recipe

Ingredients:

  1. 6 medium-sized tomatoes

  2. 1 medium-sized cucumber

  3. 1 red bell pepper

  4. 1 small red onion

  5. 2 cloves garlic

  6. 2 cups gluten-free tomato juice

  7. 2 tablespoons olive oil

  8. 2 tablespoons red wine vinegar

  9. 1 teaspoon salt

  10. 1/4 teaspoon black pepper

  11. 1/4 teaspoon cumin

  12. 1/4 teaspoon smoked paprika

 

Instructions:

  1. Wash and chop the tomatoes, cucumber, red bell pepper, and red onion into small pieces. Peel and chop the garlic cloves.

  2. In a blender or food processor, puree the chopped vegetables and garlic until smooth.

  3. Add the gluten-free tomato juice, olive oil, red wine vinegar, salt, black pepper, cumin, and smoked paprika to the blender. Blend until well combined.

  4. Transfer the gazpacho to a large bowl, cover, and refrigerate for at least 2 hours or until chilled.

  5. Once chilled, taste the gazpacho and adjust the seasoning as needed. Serve cold with a drizzle of olive oil and a sprinkle of fresh herbs if desired.
