Vegetarian Chili Recipe

½ cup diced carrots
½ cup diced onion
2 cloves garlic
15 ounce can red beans, rinsed and drained
15 ounce can diced tomatoes
8 ounce can tomato sauce
¼ cup diced green pepper
1 Tbs chili powder
½ tsp cumin
½ tsp oregano
1 bay leaf
pinch of celery seed
salt and pepper to taste


Cook carrots and onions in pan with a little water until onion is translucent.
Add garlic and cook briefly.
Add beans, tomatoes, green pepper and seasonings.
Bring to a boil and simmer for 30 minutes or more.

Makes about 5 cups.
