Baked Oatmeal

1/2 cup oil
3/4 cup sugar
2 eggs, beaten
3 cup gluten-free oatmeal
1 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1 cup milk
1 tsp vanilla

*Optional: add fruits and nuts for more texture and flavor.


Mix oil, sugar and eggs.
Add oatmeal, baking powder, salt, cinnamon, milk and vanilla.
Pour into a 9″ x 9″ pan. Bake 350 for 30 minutes.
Serve warm with milk.

Can refrigerate leftovers to serve another day.
