½ cup butter (or nondairy margarine)
1 ½ cup sugar
1 cup sour cream (dairy-free sour cream OR soymilk plus 2 tsp of lemon juice can be used)
1 tsp of vanilla
1 ¼ cup gf flour blend
1 tsp baking soda
½ tsp salt
(select one of the following to make the cake flavor of your choice)
Banana Bars: 1 cup mashed bananas.
Pumpkin Bars: 1 cup canned pumpkin plus 1/4 tsp nutmeg, and cinnamon to your desired taste.
Spiced-Carrot Cake: ½ cup finely crushed pineapple spices, ½ cup finely shredded carrots, 1 tsp nutmeg, 1 Tbsp ground cinnamon, and ½ cup walnuts or pecans (optional).
