4 cups water
2 cups potato pearls
1 cup sour cream
1 cup shredded Cheddar cheese
6 slices bacon, crispy cooked, crumbled
1/4 cup sliced green onions, with tops
Boil water, add potato pearls; beat with fork until smooth. Spread in 2 quart casserole dish.
Spread with sour cream. Sprinkle with cheese, bacon and onion.
Microwave uncovered on high 2 to 3 minutes or until cheese begins to melt.
