1 lb. Fresh Green Beans, trimmed.
1 T. Minced Shallot or White Onion
1 T. Olive Oil
1 T. Lemon Juice
1 tsp. Whole Grain GF Mustard (Maille, Organicville)
¼ tsp. Salt
¼ tsp. Fresh Ground Pepper
1 tsp. Minced Garlic (opt.)
In a large bowl big enough to hold green bears, whisk together shallot/onions, olive oil, lemon juice, mustard, salt, and pepper. Set aside. Steam green beans until tender-crisp or the desired texture. Place green beans in bowl with dressing. Mix well, make sure all the beans are coated.
