2½ cups of all-purpose gluten-free flour mix
1 teaspoon baking powder
½ teaspoon salt
1 cup white sugar
¾ cup butter, softened
1½ teaspoons vanilla extract
In a bowl whisk flour, baking powder, and salt together and set aside. Beat together with an electric mixer, white sugar, ¾ cup butter, and 1½ teaspoon vanilla; add eggs, 1 at a time, and beat together until mixture is smooth. Slowly add in flour mixture and form dough into a ball. Wrap ball with plastic wrap and refrigerate for 1-2 hours.
Preheat oven to 325 degrees F.
Roll dough onto a lightly floured surface and cut into shapes using cookie cutters. Line baking sheet with parchment paper and arrange cookies on a baking sheet.
Bake in the preheated oven until edges begin to brown, about 10 minutes. Cool cookies completely before removing them from the baking sheet.
